Filipino regional cuisine to be showcased at James Beard House

NYC foodies are in for a treat as regional Filipino cuisine makes it to the prestigious James Beard House.

With its goal to preserve, promote and develop Filipino cuisine, Filipino Food Movement and JBKollaborations are presenting this gastronomic event, which involves five chefs from across the United States.

Filipino American chefs, Francis Ang (Pinoy Heritage/San Francisco), Lou Boquila (Perla/ Philadelphia), Carlo Lamagna (Magna/Portland) and Melissa Miranda (Musang) will be joined by Miguel Trinidad (Jeepney & Maharlika/ NYC) and they will be serving a five-course dinner focusing on the cuisine from various regions of the Philippines.

Among the main dishes showcased will be escabeche, sarciado, pancit Isabela, dinardaraan and tinagtag. There will also be appetizers and wine-pairing.

Carlo Lamagna said that the menu is inspired by the many regions of the Philippines.

“We are set on showcasing the many flavors and techniques that the Philippines has to offer. As young chefs, we are excited to bring our skill and training to the table, and giving our interpretations of some classic dishes,” he shared.

“The Regional Filipino Celebration at the James Beard House is the first event we’ve done outside of the San Francisco Bay Area and we are excited to see where it takes the movement,” said Joanne Boston, Co-Director and founding member of the Filipino Food Movement.

The collaborative dinner happening next week was planned more than a year ago.

“Our friend, Chef Paolo Dungca was visiting San Francisco from Washington D.C.. We were at a Fil-Am restaurant and he said, “Wouldn’t it be cool if we had Filipino food at the James Beard House in NYC?” I picked up my phone right then and there and texted our other friend Chef Sheldon Simeon in Maui who I knew was already known at the Beard House. Sheldon got the ball rolling for us,” Boston shared. “Paolo and I did a pitch to the James Beard Foundation in the Spring of 2017 and here we are now. We knew that having a dinner here was going to be a big deal because a collaboration dinner like this has never happened before.”
